Tape and float is the finishing stage that turns hung sheetrock into one continuous surface. Joint tape goes over every seam, then successive coats of compound are floated wider and wider to feather each joint invisibly into the panel. Fastener heads and inside corners get the same treatment. Done correctly, you cannot tell where one sheet ends and the next begins.

Any time new sheetrock goes up, and any time a repair patch has to blend into an existing wall. It is also what corrects finishes that were rushed the first time — visible seam lines under paint, ridges you can feel with your hand, bubbled tape, cracked corner bead. Those flaws do not disappear under another coat of paint.

Patience more than anything else. Each coat has to dry fully before the next goes on, so this stage cannot be compressed regardless of timeline pressure. Beyond that: the right compound for each pass, progressively wider knives, properly set corner bead, and careful sanding. Then a finish level matched to the lighting, since raking light exposes every imperfection.
